If summer has a flavor, its the Tomato.  And it party of choice is the lowly tomato sandwich.

 

Beefsteak beauties, purple heirloom, sweet cherry, and plum all make a flavorful kaleidoscope of culinary love all ages can enjoy.

 

In our house, the tomato sandwich is a summer staple.  Warm from the garden.  Bursting with decadence.  Ready to be devoured.  There are never enough to fulfill our wantonness of this fruit in disguise.

 

But there is no need for the humble tomato to lean strictly on its own flavor.  She loves being en-robed in a myriad of herbs and taste factors.

 

 

Mayonnaise, hummus, even ricotta cheese makes a great base against your bread or cracker of choice.  Our family enjoys a tender whole wheat bread gently basted with mayo on a regular basis.

 

Then comes the seasonings.  Salt and pepper are her usual co-conspirators. But don’t forget the herbs parsley and oregano. Or adding garlic or onion powder to bring in a savory note.  Pickles can give a lovely twist. And hot sauce never goes amiss.

 

 

Today we celebrate the tomato and her ability to transform a normal day into a culinary masterpiece.

Kicked Up Tomato Sandwich

A divine tomato sandwich perfectly suited to curb your craving for a summer day.

Ingredients

  • 2 slices Toasted whole grain bread
  • 2 tbls Mayo
  • Salt
  • Pepper
  • Parsley
  • Garlic powder
  • 1 slice Beefsteak tomato 1/2 inch thick

Instructions

  1. Generously smear mayo on one side of both slices of toasted bread. This keeps your bread from getting soggy. Season the mayo covered slices with salt, pepper, parsley, and garlic powder. We like to go heavy on the seasonings. But season to your tastes. Place one beautiful thick cut tomato slice reverently on the bread. Place the other bread slice on top and restrain yourself. This is a sandwich deserving of being elegantly cut and plated. Serve with a side of chips or rolls of deli meat for added protein.
