Corn salad is a terrific way to cool down in the summer and a delicious way to enjoy the bountiful summer corn crop.  With this you can use fresh or canned corn.

 

Corn Salad

1 can White Corn or 4 ears of fresh white corn off the cob

1 can of whole kernel corn or 4 ears of yellow corn off the  cob

1 cup of diced bell pepper

1 cup of diced cucumber

1/2 cup chopped red onion

2 Tablespoons of chopped pimento

Dash of salt and pepper

1/2 cup of vegetable oil

2 Tablespoons red wine vinegar

3 Tablespoons of sugar

 

Mix the oil, vinegar, and sugar in a large serving bowl.  Mix in the vegetables and allow it to marinate chilled overnight.
